Η Μαρία Καρασίμου έχει πτυχίο από το Τμήμα Διοίκησης Επιχειρήσεων από το ΤΕΙ Λάρισας, Μεταπτυχιακό Δίπλωμα στη Τραπεζική της Σχολής Κοινωνικών Επιστημών του Ελληνικού Ανοικτού Πανεπιστημίου (ΕΑΠ) και είναι κάτοχος διδακτορικού διπλώματος από το Τμήμα Ηλεκτρολόγων Μηχανικών και Μηχανικών Υπολογιστών του Πανεπιστημίου Θεσσαλίας.
Εργάζεται στην Γραμματεία του Τμήματος Ηλεκτρολόγων Μηχανικών και Μηχανικών Υπολογιστών της Πολυτεχνικής Σχολής του Πανεπιστημίου Θεσσαλίας από το 2000. Από το 2006 μέχρι και σήμερα είναι Προϊσταμένη της Γραμματείας του Τμήματος.
Από το 2022 έως και σήμερα διδάσκει στο Τμήμα Ηλεκτρολόγων Μηχανικών και Μηχανικών Υπολογιστών της Πολυτεχνικής Σχολής του Πανεπιστημίου Θεσσαλίας
Τα επιστημονικά της ενδιαφέροντα επικεντρώνονται στην κυρίως στην μεθοδολογία οικονομικών ενέργειας και την ανάλυση και σχεδιασμών των πολιτικών της νέας ενεργειακής βιομηχανίας.
